Stir-Fry Asparagus with tofu is a healthy, delicious and meatless dish you will love.
First is to prepare the asparagus, remove the woody ends, gently bend the end of each spear until it snaps naturally.Then cut it diagonally into 2 inch size. Set aside.
Next, open a package of tofu and drain the water. Cut the block of tofu width-wises. Fry in a pan until golden brown then cut into 1 inch cube slices.
In a medium pan over medium heat, heat oil. Add onions and garlic and cook for about 1 minute. Add asparagus and cook for about 3 minutes or until half-cook.
Lastly, add oyster sauce and bring to simmer for about 2 minutes or until slightly thickened or add water as needed. Add tofu and continue to cook for another 3 minutes and don't over cook the asparagus until it is still tender-crisp. Serve hot.
